Turkey and Apricot Burgers

Burgers always go down well here, and I can control the children's salt intake better if I cook from scratch so these are ideal - easy to make and even easier to eat!  I used free range turkey thigh mince - I think a burger needs a little more fat, but it's still significantly leaner than most meats.  I like to use organic (and therefore unsulphured), ready-to-eat apricots; they give a lovely smoky sweetness, and a flavour I think goes really well with turkey.

 I should probably leave food photography to the professionals, but it's an attempt - my recipe creation skills are far better!

Ingredients
1 tbsp olive oil
1 red onion, finely chopped
1 garlic clove, crushed
2-3 sprigs fresh thyme, leaves picked
500g turkey thigh mince
7 dried apricots, finely chopped
50g fresh breadcrumbs


Method
Heat the oil over a medium heat then saute the onion and garlic until softened, about 5 minutes or so.  Add the thyme leaves and continue to cook for a couple of minutes.

Transfer the onion, garlic and thyme to a bowl then add the remaining ingredients, mixing thoroughly and adding seasoning if you want to (I just put some ground black pepper in).

If you have time you could pop it in the fridge for a bit at this point - I find it easier to handle if it's firmed up a bit.

Shape into 8 burgers (it helps if you have wet hands for this bit) and grill for 6-7 minutes on each side.

We had these with potato wedges and salad.
The Daddy ate 4.  Yes, 4.

Oh, good, I was worried they looked a bit rubbish!! They were sooo nice, I'm going to make them again very soon.
